Ingredients

  • 1 lb mild Italian sausage, uncased
  • 2 tbsp Italian seasoning
  • 1 zucchini
  • 2 sweet bell peppers
  • 2 onions, chopped
  • 2 garlic cloves, finely chopped
  • 1/8 tsp chili flakes
  • 1 cup Parmesan cheese, shredded
  • 796 ml crushed tomatoes
  • 340 g linguine
  • extra virgin olive oil
  • salt
  • pepper

Directions

  1. Bring 1-1/2 litres of water to a boil.
  2. Core the peppers and cut into 1/2 inch pieces.
  3. Halve the zucchini lengthwise, then cut into 1/4 inch thick half moons.
  4. Heat a large pan over medium-high heat.
  5. Add 1 tbsp oil and sausage to pan and cook, breaking ups sausage into smaller pieces until no pink remains.
  6. While sausage cooks, cook linguine according to package directions. Remove pot from heat, drain and return to pot.
  7. When sausage is done, set aside.
  8. Add 1 tbsp oil, zucchini, peppers, and onions to the pan. Cook stirring often.
  9. Add garlic, Italian seasoning, and chili flakes to veggies.
  10. Add sausage and crushed tomatoes to the ban with veggies and stir well.
  11. Simmer, stirring occasionally, until sauce thickens slightly.
  12. Add sauce to the pot with linguine.
  13. Season with salt and pepper, and toss well.
  14. Serve with Parmesan cheese.

Notes

  1. Try broccoli instead of zucchini.
  2. If you don’t have fresh tomatoes or canned crushed tomatoes on hand, crushing a few cans of Ro-Tel Tomatoes works nicely.
