Ingredients
- 1 lb mild Italian sausage, uncased
- 2 tbsp Italian seasoning
- 1 zucchini
- 2 sweet bell peppers
- 2 onions, chopped
- 2 garlic cloves, finely chopped
- 1/8 tsp chili flakes
- 1 cup Parmesan cheese, shredded
- 796 ml crushed tomatoes
- 340 g linguine
- extra virgin olive oil
- salt
- pepper
Directions
- Bring 1-1/2 litres of water to a boil.
- Core the peppers and cut into 1/2 inch pieces.
- Halve the zucchini lengthwise, then cut into 1/4 inch thick half moons.
- Heat a large pan over medium-high heat.
- Add 1 tbsp oil and sausage to pan and cook, breaking ups sausage into smaller pieces until no pink remains.
- While sausage cooks, cook linguine according to package directions. Remove pot from heat, drain and return to pot.
- When sausage is done, set aside.
- Add 1 tbsp oil, zucchini, peppers, and onions to the pan. Cook stirring often.
- Add garlic, Italian seasoning, and chili flakes to veggies.
- Add sausage and crushed tomatoes to the ban with veggies and stir well.
- Simmer, stirring occasionally, until sauce thickens slightly.
- Add sauce to the pot with linguine.
- Season with salt and pepper, and toss well.
- Serve with Parmesan cheese.
Notes
- Try broccoli instead of zucchini.
- If you don’t have fresh tomatoes or canned crushed tomatoes on hand, crushing a few cans of Ro-Tel Tomatoes works nicely.
